Not Yo' Mama's
Roasted Vegetable Sandwich
Serves 4
- 1 loaf focaccia or chiabatta bread or 4 quality sandwich rolls
- 4 large portabella mushrooms, stems removed
- 2 squash, sliced ¼ inch wide, length wise
- 2 zucchini, sliced ¼ inch wide, length wise
- 1 eggplant, sliced ¼ inch, rounds
- chevre (fresh goat cheese), optional
- 4 slices of tomato
- 2 ounces of arugula
- Not Yo' Mama's pepper marmalade
- Olive oil
- Salt and Pepper
Preheat oven to 425 degrees. Brush vegetables (reserving arugula) with olive oil, salt and pepper to taste, and place on cookie sheet. Roast until just brown, about 10-12 minutes.
Toast bread. Spread goat cheese on bottom slice of bread, begin layering vegetables beginning with portabella mushrooms, following with squash, zucchini, eggplant, and tomato, spoon on a tablespoon of Not Yo' Mama's pepper marmalade, top with arugula and the other piece of bread.
